PROŠEK MADIRAZZA

MADIRAZZA PROŠEK IS A SPECIAL NATURAL DESSERT WINE.  THE WORD PROŠEK , OR PROSECCO IN ITALIAN, MEANS SEMI-DRIED. THE   MAKING OF IT  REQUIRES  LETTING  THE GRAPES DRY. THEN THEY ARE CRUSHED AND PRESSED, THUS GETTING  THE GRAPE MUST WITH A HIGH CONTENT OF SUGAR.   THE MUST IS THEN ALLOWED TO FERMENT,    REACHING  UP TO  15 TO 16%  ALCOHOL,    NEVERTHELESS  KEEPING A HIGH CONTENT  OF UNFERMENTED SUGAR RESIDUE. PROŠEK IS  DARK YELLOW COPPER IN COLOUR,  EXTREMELY SWEET, AND HAS A FANTASTIC FULL BOUQUET. IT IS BEST SERVED COOLED AS AN APERITIF COMBINED WITH CAKES, COLD CREAMS AND PANCAKES.
